Abstract
Purpose : The purpose of this study was to compare the proximate, antioxidant properties, and anticariogenic ability of Korean(panax ginseng) and Canadian white ginseng (panax quinquefolius).

Methods: The Korean and Canadian ginsengs were compared in terms of moisture, crude fat, protein and ash. The Samples were extracted using 60% ethanol and used to perform reducing sugar and DPPH-scavenging assay to examine antioxidant powers. The extracts were used against streptococcus mutansto measure their anti-cariogenic effects.

Results: The result of following experiment showed that Canadian and Korean ginseng contained similar amount of crude fat, protein and ash. However, the moisture level of Canadian ginseng was higher compare to Korean ginseng. Furthermore, DPPH-scavenging power was higher in Canadian ginseng when total phenolic content and reducing ability was greater in Korean ginseng. The Korean ginseng displayed wider clearing zone in the disc method as well as lower minimum inhibitory concentration to s.mutans than the Canadian ginseng.

Conclusion: Korean ginseng(p.ginseng) and Canadian ginseng(p.quinquefolius) were similar in proximate contents and antioxidant abilities. However, Korean ginseng was more effective to inhibit growth of a cariogenic bacterium(Streptococcus mutans).
